Lemon & Herb-Crusted Cod

4 boneless cod fillets
4 tomatoes, halved
Salt and freshly ground black pepper
50g (2oz) dried breadcrumbs
2 tablespoons mixed fresh herbs, chopped
25g (1oz) butter, melted
Zest and juice of ½ lemon
Preheat the oven to 180°C/350°F/gas 4.

Put the cod portions and tomato halves in an oiled baking dish and season lightly.
Mix the remaining ingredients together and press the crumb mixture on top of the fish
and tomatoes.
Bake in the oven for 20 minutes or until the bread crumb topping is golden-brown and the fish flakes easily.
