Angel Hair Chilli Prawns
400g (14oz) angel hair or vermicelli pasta
2 tablespoons olive oil
175g (6oz) raw shelled tiger prawns
1 fresh red chilli, finely chopped
2 garlic cloves, finely chopped
Salt and freshly ground black pepper
A handful of fresh parsley, finely chopped
Cook the pasta in a large pan of boiling water according to the packet instructions.
Heat the oil in a frying pan and, when hot, add the prawns.
Cook for 2-3 minutes until they turn pink, then add the chilli and garlic and
cook for another 1 minute. Add seasoning.
Drain the pasta and return to the pan.
Tip in the prawns, along with the parsley, and toss everything together
